If you love sourdough, Kelsay Cosgrove just might become your best friend.
This self-taught former cottage baker sells all things sourdough at KCC Bakery, her cozy Elkhorn shop. You’ll find sourdough bagels, English muffins, and several varieties of bread inside her bakery, as well as breakfast sandwiches crafted with her bread. While the rest of the world was becoming obsessed with sourdough during the pandemic in 2020, Kelsay began her work far earlier, launching KCC Bakery in 2017.
The business didn’t start with a quaint shop, though. Kelsay’s baking career began as a side hustle, as she baked in her home kitchen for porch pickups and farmers markets to supplement her corporate job. Demand grew so great that she basically had to transform her basement into a bakery, and even then she could only meet Omaha’s demand for so long.
Thus, in late 2026, KCC Bakery launched its brick and mortar location and took things to the next level.
Now, in addition to selling sourdough bread, she offers sweet treats, breakfast sandwiches, and more.
But it all comes back to the bread, because if Kelsay didn’t craft an elite loaf, her business never would’ve gotten off the ground. And her sourdough game is about as strong as any bakery in Omaha.
The boules are gorgeous visually, presenting as an oval carb heaven with a golden brown crust. The texture is firm, crispy and crackly, with tiny blisters that show good fermentation. There’s a a pronounced “ear”—the flap that’s produced when slashed before baking.
Inside you’ll find pillowy soft bread with a pleasant chew and a light airiness. Gas bubbles produce small cavities, creating a network of air pockets.
The basic sourdough loaf is slightly tangy, though it’s mild and well-balanced. The crust adds a touch of bitterness, rounding out an earthy, toasted flavor with a brilliant texture contrast of crispy outsides and tender interior.
KCC Bakery also offers boules with flavors added, ranging from Jalapeno Cheddar and Italian Herb & Cheese to adventurous flavors like Asiago Black Pepper and Maple Oatmeal. Each loaf has its own personality, and the Garlic Parmesan perfectly balances the nutty, salty cheese with the sharp, savory flavor of garlic.
KCC’s sourdough proficiency extends to other bread offerings. Her English Muffins as thicker than I’ve ever seen, easily standing at two inches tall. The additional depth adds more of that spongey soft texture with plenty of pores perfect for soaking up butter or jam.
The Sourdough Bagels are wonderful too, as they have a gorgeous golden brown color and reflective sheen. They’re quite chewy, with a crispy outside that has some gives in the center.
That’s critical for building a bagel breakfast sandwich; if the bagel is too firm, all the contents will spill out the backside on the first bite. KCC’s bagels are tender enough to allow for clean bites, and when you stop into the shop, you get a sense for Kelsay’s culinary creativity.
While the shop’s breakfast sandwich options may change each month, I pray The Green Light gets a permanent slot in the rotation. The cream cheese slather and avocado add a wonderful creaminess to match the savory nature of the fried eggs, and the chili crisp brings just the right amount of heat.
The Sweet Heat delivers on the promise of its name, as the strawberry jalapeno jam brings sugar and spice (though definitely more of the former). The eggs are again cooked brilliantly, but the bacon is a bit soft and lacks the texture this sandwich needs.
It’s not all about bagels in KCC’s shop, however, as The Day Maker shows. That thick English muffin is stacked with sausage, fried eggs, melted cheddar, and a light maple glaze for a beautiful marriage of sweet and savory.
Speaking of sweets, KCC Bakery does those extremely well, too. The Chocolate Chip Cookies have that almost underbaked quality to them, as the middles are wonderfully soft and gooey. And KCC employs large chunks of chocolate, giving each bite sweetness and texture.
