Such as the words Gene Wilder sings as he introduces customers into his candy world in Willy Wonka and the Chocolate Factory. I imagine he’d serenade guests with a similar tune if he were the doorman at Deviled Egg Co.

“Imagination” is the operative word at this new establishment, which began as a catering company and food truck and evolved into a storefront operation near the end of 2021.

Even Mr. Wonka would be astounded at the idea of starting a food business around such a niche market as deviled eggs, and he’d choke on a Gobstopper if he heard said company was topping their eggs with ingredients such as BBQ sauce, crab mix, and corned beef.

And yet, Deviled Egg Co. is thriving.

To accommodate high demand, Deviled Egg Co. has numerous ways to get its products into the hungry hands of its customers. They sell wholesale to grocery stores and coffee shops and provide catering for local events. The food truck can be found out and about throughout Omaha, and Deviled Egg Co. often offers delivery to nearby bars such as Two Fine Irishmen and Bearded Brewer

Now with the storefront (located just off 180th and Q), you can also pick up eggs to go or eat them right in the shop.

Of course, the entire concept would fall to pieces if the standard deviled egg recipe itself were a flop. Fortunately, Deviled Egg Co.’s cornerstone, the Traditional, provide a rock-solid support for the entire operation.

The egg whites are firm enough to pick up and withstand a load of toppings, yet tender enough to easily surrender to a bite. The interior combination of mayo, mustard, and vinegar is tangy and creamy and awakens the palate with a dusting of sweet, smoky paprika. Soft and luscious with a slight twinge of sweetness, the Traditional proves Deviled Egg Co. knows how to make the best version of this potluck staple.

But it’s just getting started.

Since starting Deviled Egg Co. in 2017, owner Raechel Van Buskirk has crafted more than 50,000 eggs and tested dozens of flavors, helping her establish a wildly inventive and shocking menu.

The idea of having a deviled egg take on the flavors of a taco or pulled pork sandwich, much less a sushi roll or bagel, is almost too much to comprehend. But once you take a bite and wrap your mind around the reality that a deviled egg can taste exactly like a chicken wing, your world will never be the same.

I’d argue the best way to experience the menu is to order as many flavors as possible. But if you’re limited to a few, here are the ones that really stand out to this palate:

  • Sriracha Bacon: Spicy and salty with a nice texture from cuts of crisp bacon. While sweetness is a background flavor of both Sriracha and the egg itself, this dish has just the right amount of sugar.
  • Cali Roll: All the flavors of a sushi roll wrapped up in a deviled egg. The crab mix and avocado are soft and creamy while cucumber chunks add some bite.
  • Reuben: Tangy 1000 island, salty corned beef, and sour sauerkraut; turns out Omaha’s signature sandwich is amazing in deviled egg form.
  • Walking Taco: I don’t know what else to tell you: it tastes just like a taco. A schmear of refried beans, seasoned taco meat, and a copious amount of cheddar cheese gives this a welcome Mexican flair.
  • Chick-Fil-Egg: A play off of everyone’s favorite fast food chicken joint, this eggs employs grilled chicken, pickle, and a tangy sauce to mimic the famous sandwiches.
  • Backyard BBQ: BBQ sauce and pulled pork shouldn’t appear anywhere near a deviled egg, right? That’s what I thought before tasted this sweet, tangy concoction, topped off with an acidic pickle slice.
  • Everything: You know the everything seasoning that gives a bagel those savory, salty pops? Sprinkle it on a deviled egg and magic ensues.
  • Ham & Cheddar: It’s the sandwich we all loved as kids in deviled egg form. Nothing fancy, everything delicious.

Some of the flavors are more singles or doubles than home runs. I found those that featured hot sauce (other than the Bacon Sriracha) to be rather mild. Also, due to the distribution of ingredients, some eggs produced very different experiences between bites depending on whether that morsel included a pickle or chunk of chicken or ham. 

It should be noted that, while Deviled Egg Co. plans on adding potato salads, boozy drinks, and a coffee bar, deviled eggs and charcuterie boards are its only currents offerings. Compared to other restaurants, the menu is pretty limited. 

But if you’re coming to a place called the Deviled Egg Co., what do you expect?

And here’s the cherry on top of Deviled Egg Co. it’s all healthy! Each egg is gluten-free, keto-friendly, and under 55 calories. That way, you can order the whole menu (hand raised) and still feel good about your decision.

I had my questions when I first happened upon Deviled Egg Co. Could a company survive solely based off this one food item? Was there enough demand for such a thing?

But after tasting its offerings and seeing the strong social media buzz this place has generated, I’m a believer. Not even Willy Wonka can top the ingenuity and delicious flavors here.
