That’s the tagline you’ll find on the back of Barb’s Breakfast Bar, a tiny food trailer that typically posts up downtown. The phrase works in two respects. First, it honors Barb, the late mother of owners Amya and Amanda Frazier, whose love and strength to persevere inspired them to open the truck and spread love the best way they knew how: breakfast food.

But heaven also describes the place your tastebuds can briefly ascend to while eating here, particularly if that dish involves scrambled eggs.

You’d never know that great breakfast food was coming out of this truck if you happened to pass by. The white trailer, usually parked outside of coffee shops and hotels downtown (check BBB’s social media accounts for its schedule) is small and would be easy to miss if not for the giant red “Breakfast” flag.

The truck is so cramped I’m surprised the sisters even have room to store ingredients and supplies in it, much less use a griddle and cook dishes. But they clearly have found a rhythm to make it work.

Amya and Amanda are wise to keep the menu concise with such limited room. Your options include several breakfast sandwiches, a burrito, two bowls (potato and keto), and pancakes. The sisters are smart to package similar components (eggs, bacon, and sausage) in several different ways, offering variety without creating clutter on the truck.

The best of those components are the scrambled eggs. BBB’s eggs are so creamy and buttery they almost have a custard-y consistency. The texture is smooth and supple, and they’re seasoned wonderfully.

They might be best enjoyed in the Keto Bowl, which melts a mess of cheese into the eggs and intersperses chunks of bacon and sausage throughout the dish. The silky eggs have a pleasant contrast with the crisp meats, and the gooey cheese pulls it all together into a cohesive bite. If you want some starch, order The Body, which is the same bowl, only with chunks of crisped-up potatoes.

Prefer a handheld option? Go for The Goddess, which stuffs those wondrous eggs inside a griddled tortilla with bacon, sausage, and cheese.

It’s not all about the scrambled eggs at BBB, though, as The King proves. This sandwich swaps out the scrambled eggs for two over medium eggs. These still provide the egg-y flavor but don’t have quite the richness of the scrambled version. 

But that’s OK, because the meats take center stage. The crisp bacon adds salt and fat, while the peppery sausage slides in a touch of heat. The bun is the kicker; BBB employs a buttery croissant, which brings a rich, butteriness to each bite. 

It’s an excellent sandwich, and one more component could make it elite. The creaminess of an aioli or the sweet/heat of an onion jam could really send this sandwich over the top.

If you’re looking for breakfast in its simplest form, there’s The Promise, BBB’s take on a traditional breakfast. Those buttery, golden scrambled eggs appear again, this time alongside pancakes and your choice of meat. The pancakes are a bit flat and lack the rise that makes pancakes delightfully fluffy.

But they have a good subtle sweetness, enough that one doesn’t need syrup to enjoy them. In fact, I’d recommend using BBB’s homemade Apple Cinnamon Jam in the place of syrup.

The bacon is cooked well and adds good salt, but it’s not the highest quality bacon you’ll find.

BBB specializes in cooking breakfast food very well and piling it high in various mediums. It’s breakfast food done simply, but cooked very well, and served within minutes. This doesn’t mean every dish is perfect, and some minor tweaks could help a few of BBB’s dishes.
